To withstand the high level of usage in the foodservice industry, catering crockery should possess certain features:

- High impact strength and thermal shock resistance - manufacturers have introduced alumina, which gives the bisque strength and glaze durability; it also makes the thermal shock and edge chip resistance higher.

- Appliance suitability - microwave, dishwasher & oven safe.

- No metal marking, stackability and low porosity - catering crockery is pin fired so that the “foot” is also glazed. This prevents scratching when stacked, as well as water absorption through the foot, which may ultimately result in hairline cracks.
