When choosing an electric fryer one of the most common misconceptions is that a bigger tank equals more chips. However, the chips will take longer to cook and will be stood for longer waiting to be sold, which will impair the taste and quality.
When comparing a range of electric fryers, you may find they all have the same litre capacity but differ in the power rating. This means the caterer can better select a fryer based on their needs by choosing the appropriate power rating.
All of the fryers will cook the same number of chips at a time but the recovery rate of the oil on the more powerful fryers means that they will be able to cope with cooking a much larger number of portions per hour. Any unit above a power rating of 3kw will not plug into a standard socket and will need hardwiring.
Despite it’s former reputation as a perilous and unhealthy method of cooking, frying is one of the most popular procedures. Scampi and chips and light bites such as onion rings are still popular and while consumers are willing to moderate the fried food they eat in line with governement advice, they are not prepared to give up the dishes they enjoy.
As catering equipment suppliers, we have a full range of electric and gas fryers from Lincat, Fortius and Falcon.
