Now, more than ever, profits within the pub and bar industry are at a constant struggle and Publicans are having to continuously re-evaluate their current systems, checking for the most cost effective way of producing good quality food. Kitchen equipment is now so versatile that machines such as the combi oven, allows a chef to cook a huge variety of different recipes – saving on cost, time and energy and are perfect for cooking in bulk.
The simplicity of the combi oven is also a key factor for chefs – the click of a button can toast bread, roast a chicken, poach, grill and bake. It can also dramatically cut costs and equipment footprint in a kitchen that needs to be mindful of space. It’s a hero product that can significantly increase levels of production as even the chef’s signature dish can be completed to perfection by an untrained member of staff at the push of a button due to the sophistication of advance programming.
Most importantly, food quality is not compromised by ease of use! In fact the end result is quite contrary – the ability to set an accurate temperature and adjust the cooking controls enables chefs to be even more precise in their recipes. We have been told that the main reason why people use combi ovens is the capability of producing plated meals without compromise.
It is factors like this that chefs and catering managers are taking extremely seriously, as ultimately it is more crucial now than ever before that high standards are met in a cost effective manner.
Another development is the speed at which combination ovens are able to heat up. In less that 10 minutes, the chef is able to begin the cooking process and subsequently not only reduces the amount of time being wasted but also significantly reduces the amount of energy being drawn down whilst the oven is warming up.
The Enhanced Capital Allowance (ECA) scheme offers businesses with enhanced taxed relief for purchasing products that meet the recommended energy saving criteria. There this should be HUGE in the industry and kitchen managers and pub owners should be actively looking for the ECA approved logo. It is, however, apparent that caterers do not fully understand the scheme and many don’t know much about it at all.
We stock products such as Williams Refrigerators that have the ECA approved logo but there is a general lack of knowledge from the purchasers point of view – the Government offers generous discounts and grants through this energy-saving scheme but sadly, it is complex and there does seem to be a fair amount of confusion. Publicans can find out more about this here: Enhanced Capital Allowance (ECA) scheme.
Early models of combi ovens were difficult to use and didn’t always produce high quality food. However, all that is a thing of the past. The systems of today have become so advanced that the benefits have become endless, resulting in an ultimately profitable appliance for any industrial kitchen – they costs and energy consumption, produce really great food, take up less space, create less food shrinkage and generate less wastage.
The simplicity of combi-ovens has resulted in them being used in every sector of the market, including cafes, pubs, restaurants and hotels, not to mention leisure facilities, event catering, hospitals and prisons.

I agree that the right catering equipment in pubs is key to a pubs success. If it keeps burning food or doesn’t cook things quick enough you will start to lose customers which is bad news.
