A bratt pan gets its name from the German word “to fry”, though in German they are called tilting pan, & do far more than fry. These large, rectangular tilting pans still have a place in larger kitchens for mass catering, with built-in heating (gas or electric) and are a versatile cooking device. The tilt feature can be electrically operated or a manual hand driven mechanism.  They can boil, braise, steam, poach, stew and fry – either deep or shallow frying. Advanced bratt pans can be plumbed in so that water can be added for cooking or to help wash out.

A pressure bratt pan performs all the same functions as a standard bratt pan, but the lid can be clamped tightly shut for cooking at a higher water temperature than 100 °C. As with any pressure cooker, the increase in pressure means the food is cooked much quicker & tenderised, so is very suitable for dishes which use tougher cuts of meat. A pressure bratt pan can also be used in atmospheric mode.

    hi / the bratt pan tilting wheel handles are the first thing to fail. can i get replacement wheel handles . regards neil
